Eggs in Nests
Ingredients
1¼ lb of ground beef (uncooked)
½ cup bread crumbs
4 tbsp grated Parmesan cheese
4 potatoes, cooked and mashed
8 eggs
7 tbsp melted butter
Salt & pepper to taste
Directions
Preheat oven to 350 degrees
Mix meat, bread crumbs, cheese, mashed potatoes & salt & pepper in bowl.
Make nests by forming 8 balls out of the meat mixture. Flatten and make an indentation in the center.
Place in buttered ovenproof dish & cook for 30 min.
Remove from oven
Crack egg into nest, sprinkle with salt & pepper to taste
Return to oven for 8-12 minutes.
Hurried Chicken With An Egg (Breakfast Sandwich)
1 very thin slice of onion (sandwich baggie the rest and refrigerate)
1 teaspoon butter
1 teaspoon Oscar Mayer Real Bacon (refrigerate the rest of bag)
1 egg beaten in bowl
1 slice of favorite bread toasted or tortilla on paper towel microwaved 20 seconds
In small stick proof fry pan add butter, onion and Real Bacon, heat until onion glazes and bacon sizzles. Add egg, stir to mix, turn off heat. Stir to make sure all egg is set.
Slip egg onto toast or heated tortilla. Season with salt, pepper, (hot sauce optional) and fold over. If in a hurry bag it in ziplock bag to eat at work. My father liked to add mayo to the top of the egg with salt and pepper and top it with toast.
